Freshly roasted Ethiopian Guji coffee beans, naturally processed and decaffeinated using swiss water process.

“Natural process” means drying coffee cherries whole without the intervention of water or machines to remove any of the fruit. Natural process coffees can be described as earthy and intense in flavor, often with notes of deep fruit and complex sweetness.

Most traditional decaf coffees are decaffeinated by over roasting and burning the coffee beans. This ensures that the heat destroys the caffeine molecules present in the coffee but also burns away all of the other flavor molecules that we work so hard to get into your cup, leaving a very dark, bitter, burnt, and carbon-y taste. The solution to this problem is through water processing!

Essentially, the Swiss Water® Process removes caffeine by gently soaking green beans in a water solution for just over 8 hour. The solution absorbs caffeine from the beans, and is then repeatedly carbon filtered until 99.9% of the caffeine is removed. This allows us to roast the beans to a non-burnt level and preserve all of the flavor molecules.

This decaf is one of my personal favorites, perfect to enjoy after noon without worrying about getting the jitters or staying up all night!
